Raw & Simple Chocolate Haystacks


These chewy, chocolate treats are super simple to make, yet, tastes like a gourmet treat. I use longer coconut threads to give it that haystack look (Sprout's grocery stores carry them) but you can use the finely shredded coconut with the same great results. Jazz it up with some chopped nuts or hemp seeds for a little nutrition boost.

Chocolate Haystacks
Makes 12 servings

Prep time: 15 minutes

2/3 cup cacao powder
½ cup maple syrup
1/4 cup coconut oil, warmed to liquid
½ vanilla bean, scraped or small pinch of vanilla powder
1/4 teaspoon sea salt (optional)
2 cups shredded coconut

Blend cacao powder, maple syrup, coconut oil, vanilla, and salt in a blender or food processor until smooth.

In a bowl, hand mix shredded coconut with chocolate mixture.

Line a plate with parchment paper. Use a spoon or melon scoop to form 12-14 individual haystacks on the parchment paper.

Freeze for 30 minutes or until firm.

The Elusive Cadbury Egg


For the past two years, Pure Juice & Takeaway in NYC has been carrying raw vegan Cadbury cream eggs around Easter time. Last year I missed out on them but this year I was lucky enough to be around to nab one for myself. Thought I'd share the experience since so many have read about it from Sarma's tweets and were probably curious as to what they were. The chocolate was smooth and dark and the center was a luscious coconut cream base. I couldn't figure out the yolk though. Turmeric? Mango? Whatever it was, it was delicious. My only complaint is that I wish it was bigger. Mmmmm...

Navitas Naturals Organic Chocolate Kit


I'm so enamored with these cute little kits that came out by Navitas Naturals. They come in three flavors: Cacao, Goldenberry, and Goji Berry, and contain all the ingredients to make your own gourmet chocolate at home. Since Goji berries are one of my favorite snack foods I decided to give the Goji kit a try.


You will need a knife, a couple of bowls and an ice cube tray. I used a heart shaped one but a standard ice cube tray will work just fine.


The kit contains a little brick of cacao butter, some Goji berries and a very delicious blend of cacao powder, mesquite, lucuma and maca powder.


Step one, shave the cacao butter into thin pieces with your knife.


Place in either a metal or glass bowl (or mason jar) and let sit in a bowl of very hot water.


Use a spatula to help it melt and change the water if it cools down too quickly.


Add the cacao mix and combine well. Pour into 12 molds and place in freezer for about 10 minutes.


Voila!



I thought they tasted fantastic though my husband didn't really care for them. I think mesquite, lucuma and maca is a little unusual for some chocolate connoisseurs but I really enjoyed the malty flavor. The cost of the kit is $9.99 and yields 12 sizable pieces. That's actually a good deal compared to other raw chocolate bars I've bought. I love that everything included was organic and thought it was fun and easy to prepare. This would be a great activity to do with children as well as make a great gift (or Valentines Day candy - thanks Adriana!). Find them at Whole Foods, your neighborhood health food store or online.

Red Hot And Raw

If you haven't had a chance to check out the 200-and-something raw food blogs out there on the internet then you may not know all the exciting new things happening in the raw food world. Here are a few things that I've been particularly excited about which I'll call my Red Hot and Raw List.

1. RawFu magazine made its debut last month. Both gorgeous and informative, it's a great read for raw food beginners and veterans alike. Lord knows niche magazines could use all the support they can get so if you have a spare $20 bucks then why not subscribe to something you can also share with your friends and family. While you're at it, check out Purely Delicious, another wonderful raw food magazine with lots of recipes, health info and great interviews.




2. The Raw Union of Matt Monarch and Angela Stokes on June 20-21. How cute are they? Two movers and shakers in the raw food world with two amazing testimonials are getting married next month by David Wolfe and everyone is invited! I'd go if I wasn't already traveling around all summer.


3. Sarma Melngailis has a new recipe book coming out on June 30th called "Living Raw Foods." Her last book, "Raw Food Real World," is my raw culinary bible so I'm especially excited to get my hands on this. Pre-order through One Lucky Duck and get a signed copy and a little something yummy with your order.


4. Gnosis Chocolate is starting to come out with a line of beauty products. If you haven't tried Gnosis chocolate bars you don't know what you're missing. They're slowly making their way to Whole Foods and natural food stores across the county and now they're introducing the first product in their beauty line, a delish chocolate bath bar. You can purchase the bath bars on their website as well as their full line of superfoods and other products at great prices.


5. Though I'm a proud graduate of Living Light Culinary School I'm also completely enamored with the new living foods culinary education center being built in Oklahoma City under the guidance of Living Light alum, Mandilyn Canistelle, and raw food chef extraordinaire, Matthew Kenney. Opening in September, the center would be home to 105 Degrees restaurant in addition to the cutting edge learning facility. Can't wait to see some photos. If Matthew Kenney is teaching any of the gourmet classes, you bet I'll be there in a heartbeat.

Ani's Raw Food Desserts


Ani Phyo is my kind of gal. She's an on-the-go, no nonsense, get it done kind of woman and, much like myself, she doesn't have time to labor in the kitchen but still wants something good to eat. Ok, sounds like everyone I know. I really enjoyed her first book, "Ani's Raw Food Kitchen," and refer to it constantly for ideas. After going through these recipes, I know I'll be using this book for a long time as well. There are 85 wonderful sweets and treats in here that you can whip up in a jiffy. Everything from pies to cookies to chocolates and parfaits, there's something in here for everyone. This isn't Matthew Kenney style dessert (love his books too, btw), no labor intensive recipes that take three days to make. This is dessert at its most basic but still very original, elegant and delicious. I've already made her Liquid Chocolate and her Strawberry Kream Cheezecake. The Liquid Chocolate is so amazing. It reminds me of Dairy Queen dipped cones when I was a kid but better. Going to try out the Lavender Chocolate Bars and Banana Bread Biscuits next and then maybe the Pear Ginger Crisp for Mother's Day. This is definitely a fun recipe book to add to your collection. I'm just hoping I can still fit into my pants after this week.

Raw In The City

Had another wonderful trip to NYC this past week. I went mostly to catch up with friends but also in search of culinary delights, adventures and inspiration. Definitely found that at Pure Juice & Takeaway. There were rumors of a raw, vegan Cadbury cream egg so I had to find out for myself. No go, guess it's still early. But I did see they had a lovely tray of Moon Pies, Mallomars, Almond Joys, and other chocolate delights. Paid $34 for four treats. Yeah, that's right, but it's research, folks, research. Here's a shot of the Moon Pie and a chunky bar I forget the name of but we'll just call "a lil taste o'heaven." The other two I ate too fast to photograph...Don't judge me.


Was sad to hear that three raw, vegan restaurants have had to close their doors since I was in town last. Jill's in Brooklyn, Sal Anthony's raw juice bar and Jubb's Longevity. It's a bummer that raw food isn't more popular especially in a major city like New York. I did pay a visit to my former place of employment, Bonobo's as well as Quintessence and Caravan of Dreams all of which were packed. Yay! Also went to a super fun raw food potluck in Queens hosted by the We Like It Raw crew and Vanessa "Chocolate Girl" Barg. I brought truffles from Bonobo's since I didn't have a proper kitchen to use. Here are a few pics of the potluck.

Had a slice of this amazing pie. Chocolate ganache with almond butter frosting. I die, I die.

This isn't a very good photo of the chocolate but it really was incredible. Check out the website for Gnosis chocolate and pick up a bar or two or three if you find them at your local health food store.

Raw foodies have the glow!

Other highlights from my trip were seeing Morrissey twice (Bowery Ballroom & Carnegie Hall), went to a taping of Late Night with Jimmy Fallon, ate at Blossom (not a lot of raw options but very good), stayed in my old Williamsburg apartment, so fun, like seeing an old friend you never thought you'd see again.
